Chorizo, Date and Spicy Shrimp Stuffing (Dorito Stuffing)
Thanks for all the interest in the Thanksgiving show on CET! I've loved getting all your emails! Here are the missing directions to go with the popular-and peculiar- stuffing recipe from David Cook. Sorry for the delay- and enjoy!
Chorizo, Date and Spicy Shrimp Stuffing
3 tablespoons extra virgin olive oil
3 tablespoons butter
2 cups onion, chopped
1 cup fennel, chopped
2 garlic cloves, crushed and chopped
1 white bread slices, cut into cubes
1 cup chicken stock
2 cups chorizo sausage, cooked, drained & crumbled
7 Medjool dates, de-stoned and chopped
2 eggs
¼ cup Doritos Nacho cheese, crumbled
1 lb baby pink shrimp, chopped
Srachia chili sauce to taste
In a large skillet, over medium heat, sauté onion, fennel and garlic in extra virgin olive oil and butter until soft. Remove from heat and toss with the rest of ingredients. Place in a well buttered Pyrex pan. Bake at 350º covered for 15 minutes, then remove. Cover and bake for 10 minutes to crisp the top.
