Healthy Chocolate Decadence Cake With Simple Raspberry Coulis

I was reminiscing with some of my cooking school colleagues about this incredible cake from Robert Dean, the "Dean of Lean". You have to taste it to believe it. If you're trying to keep your holidays healthy, you owe it to yourself to try it. And yes, the garbanzo beans in the ingredient list are correct- but you'll never be aware of them in the finished cake!  Robert Dean's Healthy Chocolate Decadence Cake With Simple Raspberry Coulis

12 oz Semi-sweet Chocolate chips

19 oz Garbanzo Beans

4 eggs or egg substitute

1 cup sugar

2 tablespoons Non-fat Mayonnaise

1/2 teaspoon baking powder

1. Pre-heat oven to 350 degrees

2. In microwavable bowl place chocolate chips in microwave and heat on high for 2 minutes

3. In Vita-mix or food processor blend garbanzo beans, eggs, sugar, mayonnaise, and baking powder on high until smooth.

4. Add pre-melted chocolate chips and mix on high until well blended.

5. Pour mixture into non-stick baking dish of choice and place in oven for 45 minutes or until knife comes out dry.

6. Serve on small plate drizzled with coulis

To prepare coulis:

In a small bowl mix 12 oz jar of reduced sugar raspberry jam, 1 tablespoon lemon juice, and 1 tablespoon of Chambord Liqueur. Microwave on high for 1 1/2 minutes or until liquefied.
